TWELVE EATERY – VEGAN RESTAURANT

I had a very exciting week last week going for lots of little brunch’s. For my University project I have to create a news feature about anything we want, so I am writing one about the health benefits of veganism. This is an interesting topic for me, as I believe that one day (when I can afford really nice food) I will be a vegan. I am currently giving up meat for lent and am really enjoying it. I don’t even miss eating any type of meat as there are so many other options. I am giving myself a day off on my birthday, just so I can treat myself on my 21st!!

This restaurant Ellie, Katie and I went to is a new vegan place that has opened up in Bournemouth. I have never eaten there before so we went for a cute brunch, which ended up being quite posh. I would definitely say we had a light lunch as all of us were still hungry after but I definitely enjoyed what I ate and would recommend giving them a visit.

I am extremely interested in my health and fitness at the moment. I have thrown myself into the gym and have been eating extremely well (for a Universtiy student.) This week I have no motivation to do anything productive because I am so excited for the weekend. I am turning 21 and am celebrating with all of my friends!! AN AMAZING VEGAN BRUNCH

For my latest University project I had to create a news feature about anything I wanted, so I decided to create one about ‘The Explosion of Vegansim.’ To do this I had to visit different vegan restaurant and gather different opinions.

Katie and I went to ‘Mad Cucumber’ at the top of Bournemouth town for brunch. As you can see from the bottom photograph it was delicious. For lent, Katie and I have given up meat which I am currently struggling with as I am going out for Thai food this evening, haha! On my birthday I did eat a little bit of meat (because it was my birthday) but I have never felt so bloated afterwards. Your body adapts extremely quickly.

This restaurant had a lot of Glastonbury vibes which made it extremely comfortable and friendly.

At the moment I am loving sour dough bread. Cutting down on gluten is doing wonders for my body, especially while I am trying to work out 5 days a week. I am going to Malaga in less that 2 weeks with all my friends and the thought of getting into a bikini surrounded by my tiny friends terrifies me so the only way to make myself feel more confident is to act it.

If I was going to recommend any diet it is a gluten free one and we are lucky enough to live in a day and age where there is a replacement for anything. Chickpea pasta, gluten free bread… so much more!! I am so excited to go back to University and cook my own meals. I have already made a huge pinterest folder full of healthy, gluten free, vegan, vegetarian meals. I am eager to experiment.

This is a really nice and easy breakfast, it is full of good fats, protein and very little gluten. It is also extremely tasty. I LOVE SALMON, I could snack on salmon all day but I need to make the most of it while I am home because I won’t be able to afford it back in Bournemouth.

The ingredients for this breakfast just include; sour dough bread, avocado, pouched eggs and salmon. So tasty!!

“This is your Sunday reminder that you can handle anything that gets thrown at you this week”

I drove back to Bournemouth on this sunny Sunday to go straight over to my friends accommodation and make a roast. What a great way to end a weekend and to prepare for a week of stress before our exam on Friday. Nothing beats a home cooked roasts, especially by my friend Tia the domestic goddess.

BLT Salad Bowl

“Skip the diet and just eat healthy”

This is a scrumptious recipe which is simple  and tasty. It is a healthy version of a BLT sandwich that includes bacon, lettuce and tomatoes but will a cheesier, sweeter taste.

THE INGREDIENTS

  • 2 rashes ofBacon
  • Lettuce (I just used enough to fill the bowl)
  • Handful of Cherry tomatoes
  • 1/2 an avocado
  • 2 tsp of feta cheese
  • 1/4 of a cucumber
  • Handful of coriander

Top tip: Try and cook the bacon until it is nice and crispy. While the bacon is cooking, chop up all the ingredients and throw it into a bowl, followed by the bacon on top. 

I added balsamic glaze on top and a table spoon of balsamic vinegar to finish it off. I also chopped 1/4 of a lemon and placed it on the side which I squeezed on top as I begun to eat, to add a bitter taste into the mix and spice it up a bit.
